  • 1/4 cup chopped cilantro
  • 1 Tbsp. olive oil

Instructions:

  1. Preheat oven to 350°F.
  2. Place poblano peppers on a baking sheet and drizzle with olive oil.
  3. Bake for 10-15 minutes, until they are slightly softened.
  4. While the peppers are baking, brown the ground beef in a large skillet over medium-high heat.
  5. Add the onion, chili powder, cumin, salt, and cooked rice to the skillet. Stir until well combined.
  6. Remove the peppers from the oven and carefully slice each one lengthwise.
  7. Remove the seeds and membranes from inside the peppers.
  8. Spoon the beef mixture into each pepper, filling it to the top.
  9. Top each pepper with shredded cheese.
  10. Bake for an additional 10-15 minutes, until the cheese is melted and bubbly.
  11. Serve hot and garnish with chopped cilantro.
